GMC Tu Way Wheel Block Cutters

GMC was commissioned to build a cutter designed specifically for wheels

of Parmesan cheese. GMC delivered an engineering marvel. This first system

was built in 2016 and the second system was built in 2018 with a couple slight

changes. Tasked to have a consistent accurate cut with wheels being slightly

different in size and shape was accomplished with these cutters. The attention

to detail in the design of these cutters is second to none. Each wheel is measured

with lasers and the automatic adjusting second cutting harp provides an exact

cut to specs.

One system is a left hand feed and the other is a right hand feed.

Both of these cutters are in like new condition as seen from the photos.

Each unit was roughly 80k new each.

GMC will tell you these both were one off systems that were over engineered but

I would disagree. If you are looking to cut an expensive wheel of cheese to exact

size look no further.

The first cut is a standard GMC harp that cuts the wheel in half. The

second cut takes the top and bottom of the wheel off and the middle of

the wheel is cut to exact size. The half moons where then cut into wedges.
